Spicy Spam Fried Rice

Scrumptious with a kick. Who can deny the fact that spam and rice is a match made in heaven? This dish will leave you satisfied, yet not overly stuffed. A great lunch or side dish for dinner.

Spicy Spam Fried Rice

Serves 4

Ingredients:

  • 2 Tbsp cooking oil

  • 1 clove garlic, minced
  • 1 tsp ginger, minced

  • 2 scallions, thinly sliced

  • 1/2 cup of frozen mixed vegetables (peas, carrots, corn variety), thawed

  • 1/2 cup of diced spam
  • 2 eggs
  • 3 cups cooked rice

  • 3 Tbsp Nam Prik Chili Sauce

  • 1 tsp salt

Instructions

  1. Heat up large pan and cook spam until brown. Set aside.

  2. Scramble and cook eggs, breaking into small pieces in pan. Set aside.
  3. Set pan over medium high heat and add oil. Add garlic, ginger, and scallion whites. Cook until just aromatic.
  4. Add rice, spam, and mixed vegetables. Cook for two minutes or until rice starts to turn golden. Stir in Nam Prik Chili Sauce and salt. Pepper to taste.
  5. Serve and top off with scallion greens.

 

 **If scallions are not your thing, you can leave them out. FYI, scallions = green onions.
